Just as your Boxing Day sandwich was so much better than the meal itself, our Bin End cases are a happy medley of those last little treats - as Trevor elaborates: "For me bin ends are often the best bit. That torn-off piece of bread that you wipe around the cooking pan, that morsel you snaffle as you pass the lamb roast remains on the worktop, wines not to be forgotten but placed on that special shelf where the last ones go…”

Little curiosities to be lingered over; the last of a vintage change or the squirrelled-away examples of a seasonal favourite. In short, the perfect bottles for a month in which our thoughts may turn to drinking less, but better.

Spring drags its feet, splashing through grey puddles and stirring cold wind in its slow wake, but we are not deterred. This is time for stoicism and comfort - an insistence that, no matter what the weather throws at us, there must be rosé twinkling in our glasses and bubbles to lift the spirits, there must be light bright whites and reds which love a chill.

For those who like things a little racy, the Fleur de Peau Orange is a juicy, refreshing delight - the perfect aperitif, as is our very own apple-fresh, delicately-bubbled Crémant. For moments when more than one glass is needed, but so are your wits, the Plume Chardonnay is a true delight at only 9% abv; and you will struggle to stick to just one glass of the La Petite Colline Blanc too, with its wonderful notes of nettle and gooseberry.

When the chill persists, the plush deliciousness of Lledoner Pelut will warm you from within - and teach you too about a fascinating lesser-used ancient local varietal, also known as ‘the hairy grape’. The clean and rounded Le Clos Rouge will be perfect if ever the weather allows a barbecue - and of course in anticipation of this joy we have the pink and lovely Eclat de Garrigue Rosé. There will be warmth to come, and we will be ready for it!
