Peter Fischer, a German who moved to Provence after studying in California, always harboured a dream of owning a vineyard in the region. He vinifies a lot of his wine in what is best described as giant concrete eggs. It’s believed that these eggs improve the evolution of the wine because the molecules do not stop moving; thereby allowing the wine to breathe during fermentation without the use or need for oak. Regardless of which tank, barrel or oeuf he uses, the common denominator is just how interesting and full of character his wines are.
